The luwak, the Asian palm civet is responsible for the famous lukak coffee, the most exclusive coffee in the world.
The nocturnal lukak civet eats the ripe coffee cherries and the beans come out in their dung. The 2 days spent in the civet's digestion track partially ferments and processes the coffee beans and gives them their unique flavour.
The beans are foraged by hand in the forest from wild civet droppings. In a day a lucky worker might find a handful of less than a dozen beans.
After collecting, at farms like these the beans are washed in boiling water, sun dried and then hand-roasted over a fire to produce truly unique and expensive coffee.
